Dextrin is a technical term used to describe the cooking process of raw materials. When starch is decomposed and hydrolyzed under heat, acid, or the action of amylase, the large starch molecules are first converted into smaller intermediate molecules; these smaller intermediate molecules are called dextrin. Dextrin is a white, amorphous powder, odorless, and slightly sweet. It is slightly soluble in cold water, readily soluble in hot water, and insoluble in ethanol and ether. Dextrin reacts with iodine to produce a red color.

Dextrin is widely used in adhesives in pharmaceuticals, food, papermaking, casting, wallpaper, labels, stamps, and adhesive tape. When used as an adhesive for tablets, rapid drying, rapid dispersion, rapid bonding, and rewetting solubility are required; therefore, white dextrin or low-viscosity yellow dextrin products can be selected. When used as an adhesive for labels and stamps, high viscosity and a strong, tough film are required; white dextrin or British gum are suitable. Dextrin can also be used as a printing paste in textile printing and dyeing.
